Chilli Jam
This is a good way to use up a glut of tomatoes.
Makes six small jars
Mix together:
500g (18oz) tomatoes
4 garlic cloves, peeled
4 large red chillies
2.5-3in (6-7cm) ginger root, peeled and roughly sliced
300g (10.5oz) golden caster sugar
2 tbsp Thai fish sauce
100ml (3.5 fl oz) red wine vinegar
Blitz everything together and pour into a heavy-based saucepan to simmer for 30-40 minutes, stirring from time to time.
